Here's a simple cookie that everyone will enjoy. Be sure the egg whites are at room temperature to guarantee full volume. Check the supermarket baking section for colorful baking sugars and sprinkles to make the cookies even more festive.
Ingredients
For 20 cookies, you will need:
| 2 large egg whites at room temperature |
| 1 teaspoon vanilla extract |
| Pinch cream of tartar (optional) |
| 1/3 cup superfine sugar |
| Colored sugar or sprinkles (optional) |
Directions
Preheat oven to 275° F. Spray a large cookie sheet with nonstick cooking spray or line with a piece of baking parchment; set aside. In a medium bowl, use an electric mixer on medium speed to beat the egg whites until frothy.
Add vanilla extract and cream of tartar (if using), and beat on high speed, adding the sugar 1 tablespoon at a time until the egg whites hold stiff peaks. Drop the batter by heaping teaspoons onto the prepared cookie sheet 2 inches apart.
Sprinkle with colored baking sugar or sprinkles, if desired. Bake for 25 minutes or until golden, and the centers of the cookies are set.
Let cool on the sheet for a few minutes. Transfer the cookies to a wire rack to finish cooling. Store in a cool, dry place.
